Definitely a new family favourite. I double the smoked paprika for a full-bodied smokey tadte. A crilowd pleaser every time! I tried the naan bread for the first time tonight - YUM! happy dance x

Transfer the inner portion of your roasted eggplant to a food processor with a little more olive oil, smoked paprika, lemon juice, tahini, garlic cloves, parsley, salt, pepper, and liquid smoke. The last ingredient is optional, but we feel it's worth it if you can find some.
Heat olive oil in a medium large pot over medium heat. Add onion, pepper, celery, and jalapeño and sauté for 6-8 minutes, or until veggies have softened and onion has become translucent. Add garlic, smoked paprika, thyme, and a bit of salt and pepper and cook for another 2-3 minutes, until garlic is fragrant and veggies are evenly coated in spice mixture.
So I had to make some adjustments bc I didn't have all the ingredients... Used 1 large sweet potato instead of the ones listed. Cut the lemon juice in half bc of comments, also didn't include the vinegar. I also did not have brown/Dijon mustard so I used some yellow mustard. Lastly, I added smoked paprika bc I love the smokey flavor. It turned out really excellent in my opinion! I don't try to fool myself with substitutions (i.e. expect it to taste like cheese). However, I'm a plant-based newby and I love saucey anything so this is something I'd definitely make again over and over to put over veggies, maybe even try over pasta. 350c69d7ab
